Espresso Workshops

Do you feel intimidated by espresso? You’re not alone. At worst, it can taste like a dirty ashtray or a tiny cup of battery acid, but at best, it opens up a whole galaxy of intense, intoxicating flavor and complexity. Not only that, but every day there’s a new gadget or gizmo you need to make it. Right? Not entirely. In this workshop, we will identify the key components to the flavor of well-extracted espresso AND the most important steps to getting there.

For the first portion of the session participants will first begin with learning proper milk steaming fundamentals to grasp proper milk texture and temperature. The second portion of the class will build upon the participants newly acquired milk steaming fundamentals as they next learn the building blocks of pouring latte art.

This class is geared towards cafe owners and baristas that own & work on espresso machines all day and want to know what’s going on in there. We’ll go over how water & power come out of your wall and then end up as espresso in your cup. As we trace the water and power pathways throughout the machine we’ll make stops along the way to explain common problems and how to diagnose them. The second half of the session will be reserved for Q&A so if you have a burning question about your particular setup, ask away!

 

Tea Workshops

Taste your way through the history and evolution of this iconic plant, Camellia Sinensis. This is an introduction to the 5 major categories of tea and the differences between them. As we taste our way around the world of tea, we will learn the different ways of processing the plant, the regions in which they are grown, and best steeping practices.

Matcha is taking the west by storm. It's brilliant color, intense flavor and myriad health benefits are gaining popularity in cafes and restaurants across the country. In this one hour workshop we will learn tips for making this amazing tea, along with its loose leaf counterparts, using traditional Japanese preparation as well as modern beverage applications.

Cocktails have been enjoyed for centuries and what makes them special is balance. With over 3000 types of tea to choose from you can utilize tea in any and every way you can think of to add complexity and specific flavor profiles to your cocktails and mocktails. We'll learn how to make your own tea flavored libations with a few simple tools and ingredients. Learn a bit about brewing, infusing and blending tea into your favorite drinks in this one hour workshop.

In this workshop, we will talk about the importance of cafe menu development for your customers as it pertains to tea and caffeine alternative beverages. Tea is often an afterthought for many cafes, and 27Teas is working to change that. By choosing loose leaf tea you are providing a unique experience as opposed to just another beverage. We will walk you through how this can be implemented in your fast paced cafe, including brewing and serving options for both hot and iced teas.

New to tea or always used a tea bag? You aren’t alone! Tea is the most widely consumed beverage in the world, behind water, yet here in the US, tea bags have remained popular. Unfortunately tea bags can lack flavor and the tea bag often contains plastics that break down in your tea. We will walk you through all the different types of teas (white, yellow, green, black, dark, and herbal), how they are produced, how to easily brew them at home, health benefits, and caffeine content in each. For some people, ‘loose leaf’ can seem intimidating but it is just as easy as a tea bag and offers so many benefits; we can’t wait to show you! This workshop also comes with tastings!

The first tea latte that exploded into the US was Chai which has a rich history unto itself. There are so many teas that pair beautifully with milk and sugar and in this workshop we'll try a few different iterations and learn how to pair different simple syrups with different teas and milks/milk alternatives. With a few basic ingredients and some simple tools, we will prepare a number of nutritious and delicious ‘milk’ based tea beverages.

Taste the Terroir of this mysterious dark tea from Yunnan. See how aging, oxidizing, fermenting and storing affect the flavor, appearance and aroma of this diverse and complex tea. In this one hour tasting we will compare and contrast the two different styles of pu-erh tea while learning a bit of history and production techniques

Have an awesome time tasting coffees and learning how to describe them using the 'SCENTONE by-pass method." We will also touch on Palate Calibration, Aroma Tasting, Origins of Coffee, Intro to Coffee Processing

 

Coffee Cupping Workshops

Water: The most important part of your coffee cupping. Explore the different waters used in cupping. Demonstrate direct impact on flavor, quality perception and differentiation. Introduce (general) context in terms of price discovery, transparency and consistency.

 

Panel Discussions

We will be talking with buyers that have built socially impactful roasting companies, discuss the steps they took to create, manage and grow them. We will also discuss relationships with producers, certification, origin projects, and traveling to origin.

 
 

"Beyond the Cup" Conversations

In this discussion, we'll explore the fundamentals of inventory management for green coffee buyers at coffee roasting companies. Precise inventory management can help coffee roasting companies avoid critical mistakes that cost money and create stress. Expect to learn how to make important inventory calculations that will help you run an efficient business.
